Homemade Baked Macaroni & Cheese Recipe ~ Easy, Creamy & Crowd-Pleasing~





Homemade Baked Macaroni & Cheese

Homemade baked macaroni & cheese....ahhhh...just the thought of those bubbling cheeses & pasta baking to perfection in the oven makes me smile! Is this really the ultimate comfort food ????

I've been baking  a crap load of homemade macaroni and cheese recipes since last week. Just trying to figure out which one is worthy enough to sit proudly on my Thanksgiving table. I try to go with a different baked macaroni and cheese recipe every year, but this year after trying so many and being disappointed, I decided to go with my old tried & true recipe. Those "testing" ingredients were getting pretty darn expensive! My purse & waistline simply can not afford to test out any more recipes!

Ok yall so this is the cheesy beauty that I will be serving up again this year. I've already received phone calls asking, no THREATENING, me that "I better  be making this macaroni and cheese on Thanksgiving! "

This baked macaroni & cheese recipe is what I call a true crowd-pleaser. It's creamy & cheesy which satisfies the kids (because yall know how kids are with mac n cheese) yet rich, comforting & complex enough to please those adults wanting that good ol' southern style baked macaroni & cheese.

Don't let the chicken stock scare you in this recipe. It just adds a lil flavor and kicks up the cheese taste (it doesn't taste chickeny)


Ingredients (this makes about 6 servings for normal people. In my house it makes 4)
Equal parts water & chicken broth to boil macaroni in
3 cups of macaroni (uncooked)
2 Tablespoons of butter
2 Tablespoons flour
1 cup chicken broth
1/2 cup half n half
1/2 cup milk
1/2 cup cream cheese, softened
4 cups of finely grated cheese (I buy the bag of Kraft mixed cheese(It's the one with the picture of the macaroni on the front. I think it's called classic melts. It is about 3 cups worth per bag and then I add a cup of Gouda cheese) 
Additional cheese to go on top (I like to use all sharp cheddar on top)
Black pepper
Paprika


Preheat Oven to 350

Step 1.) In a large pot,  add equal parts water & chicken broth. (Just enough to cook your macaroni in)  Bring to a boil. 



Step 2.) Add macaroni and cook until al dente. About 7-8 minutes (look on back of the box for the cooking time and set your timer so that you don't overcook it) When macaroni is done, drain and set aside.

Step 3) In a large saucepan over medium heat, melt butter & whisk in the flour. Cook for about 2 minute. Whisking the entire time.




Step 4. ) Slowly whisk in 1 cup chicken broth, half n half, & milk. Whisk until combined. You want the mixture to steam but NOT boil. Adjust your heat accordingly



Step 5.) Add in the cream cheese & stir until completely dissolved and smooth. Whisk & stir like crazy to get it smooth. I used a spoon to mash the cream cheese up a bit. This is my least favorite step.




Step 6.) Remove from heat & add in 4 cups of cheese & stir until smooth.



Step 7.) Pour cheese mixture over cooked macaroni and stir to combined. Add some black pepper if you'd like.





Step 8.) Grease a 9 X 9 inch pan with butter & pour the mac n cheese into it. 



Step 9.) Top with sharp cheddar cheese and paprika. Bake for 25-30 minutes. Do not overbake to prevent it from being dried out. You want the macaroni and cheese to be somewhat jiggly when you take it out. It will set as it cool and just be the creamiest, cheesiest thing ever!






Let cool for about 15-20 minutes before digging in so that it can set completely. I never can wait that long but hopefully you have stronger willpower than me when it comes to macaroni & cheese.

Serve HOT! Enjoy!!!

    I normally make Patti Labelles Over The Rainbow Macaroni and Cheese but I made this today and this IS the one I'll be serving on Thanksgiving too. I halved the recipe to make a small pan just in case I didn't like it and now I wish I would have doubled the recipe! *Heres my tips* Definitely give it time to set so that it won't be too loose. I thought it was a lil too loose at first but it set very well after about 30 minutes. I didn't have to add in any garlic powder, dried mustard or salt like I normally do. I guess the chicken broth took care of all that. This macaroni is delicious! Very creamy & cheesey. Thanks so much for being so kind to share this recipe

  5. Heres the thing, this mac and cheese is THE BEST but even BETTER the next day! The next day it has that perfect consistency that I've been searching for. Kind of like a southern homestyle kind yet creamy and cheesy. I used 1 cup of milk instead of half n half. My boyfriend said that I am not allowed to make any other kind ever because it was the first mac and cheese that he had ever tasted that had flavor.

    So my question is how do I go about reheating a whole pan in the oven? I plan on making this the day before Thanksgiving and reheating it.

  6. Bluewisper that is a good question & when you find the answer to it let me know lol

    I have yet to taste a baked mac n cheese that has been reheated in the oven and STILL tastes good. Either the noodles get soggy from being over cooked or the middle is still cold when the edges are starting to dry out.

    It's easy to reheat regular mac n cheese because you can just stir in some milk & butter to retain the creaminess but with the baked kind....not so much.

    The microwave is the only way to go when it comes to reheating baked mac n cheese without losing the flavor in my opinion.

    I'll keep looking and asking around to see how other peeps are reheating their baked mac n cheese.

    1. In a bowl if you melt some butter add some milk and a little cream cheese and pour it over it the next day put it in the oven with aluminum foil over it kind of tented but closed around the edges it heats up real well and is creamy

      just dont cook it completely take it out like 10 minutes ahead of time when you originally make it

  7. Whoa! Made this today to take to our early Thanksgiving party at work and EVERYBODY who had some wanted the recipe . This is a really good southern style baked macaroni & cheese recipe. I love that it's creamy and cheesy. A lot of baked macaroni and cheese recipes can tend to be on the dry, gritty side.

    I added in an egg and used evaporated milk instead of the half n half & milk. I also put a few slices of butter on top of the cheese before I popped it into the oven. Might as well make it super fattening right? lol It was delicious!!!

    I was hoping there would be some leftover for me to take home for my husband to try but the pan was scraped clean!

    A good mac n cheese recipe is hard to come by so thank you for sharing yours.

  10. I made this last night and I was trying to let it sit like you stated, but I couldn't. My whole apartment was filled with the aroma and it tast even better. I woke up in the middle of the night and got some more. This morning I had some too.

    Like someone mention, it taste even better after it sit overnight.

    I also like the fact you use different cheese. I know for myself that was my first time I ever tasted not along used Gouda cheese. Its great. I love it.

I made this Mac n Cheese last Sunday for dinner with some spicy baked chicken wings...Let me tell you Diva.... that Mac was so good it tasted like you and I both put our foot in it...I got yelled at by my Boo cause I didnt make enough. It last for only two days and my son kept asking every night if he could have mac and cheese for dinner again. For years I couldnt find a good recipe for this dish. I have asked a lot of my friends and coworkers and it just would never come out smooth creamy and moist....I am so glad I stumbled across your site Thanks to Ateya...Girl you Dam sure Can Cook...Thanks a million

  18. I have never made homemade mac n cheese. I found this recipe and tried it lastnight. OMG its amazing. I had some lastnight and luckily here in NY we are stuck inside due to a blizzard and lets just say the left over mac n cheese definately was better the second day around. Thank you so much. I think for Valentines im going to surprise my boo with this mac n cheese, the rib recipe on here and also the red velvet cake. Luckily I went to the grocery lastnight and bought the ingredients ;)

  19. Wow, this is truly worth all the hype is is getting. This mac'n'cheese is the first I've ever made, and it tasted like I've been making it for years!!! This is a fool proof receipe(it won't taste like it.) I wanted to mention that my fiance loved it!! He ate half of the entire thing(he's still skinny) and store a large portion for later. This recipe gets 500 thumps up from me!

I really enjoy coming to your site and trying your recipes it makes me feel like a diva knowing that i can cook the foods that my grandma made with confidence and pride.     I love your recipes, this recipe sounds very similar to the one that I make. I use the cream of chicken soup though instead of chicken broth. Same concept I guess :) but I think the cream of chicken makes it a little extra creamy but you then have to watch the salt because you know that that may throw off the seasonings. But with that, cheddar cheese soup and the grated cheddar i'm super happy:) I would love to try other cheeses but I have some family members that refuse to even taste it if they think anything other than cheddar is in there :( Also consider a little green pepper diced extremely small, not a lot but you would be surprised how much it ups the flavor.

  23. What about reheating in a water-bath...it MAY retain the moisture and slowly reheat so that it evenly gets heated all the way to the middle. Never done it, but a light bulb says "maybe".-V

  25. Let me tell you. I tried this recipe, and yes it is the bomb!

    One thing I'd suggest is if you could clear up the Chicken Broth part. The ingredients call for 1/2 cup but then you write "add equal parts water & chicken broth." If you could put the total amount of chicken broth to use I'd appreciate it. I wound up using 1qt of broth (all I had) to boil with 1qt of water, then I realized I still needed 1cup for the cheese mix, so I had to take 1cup from the pot to use later. Therefore, it wasn't exactly 1cup of chicken broth, but 1cup of diluted chicken broth.Thanks for the recipe any how, I'm also trying your greens. If they come out good, I'll post a comment

  33. I made this on Monday, after coming off of the Daniel Fast. I was craving mac n cheese. I halfed the recipe and it still came out fabulously! Loved the recipe, so simple to follow! The cheese sauce was so creamy. The next time I make it, I will not use Smoked Gouda though. It was too strong of a taste for me, overpowering. My husband thought I put bacon in it.

    I've used many of your recipes and they are always on point. This one is another I'm adding to my rotation immediately!

I was looking for a really good mac n cheese recipe that calls for Gouda, I have some leftover from a wine tasting...thank God I found your site :-) its smoked Gouda and I can't wait to surprise my husband with this along with some BBQ ribs! I'm southern but he's all city so I was also inspired to make him a red velvet after reading all these posts.. .if your gonna eat fattening you might as well go all out! Thank you and I can't wait!

  47. Ok so I love this Mac in cheese recipe! I've been making it for a couple of years now. I do have one question though, could I add in a couple eggs and if so, when would I add them (to my rue or to my mixture right before it goes in the oven)? I love the superb creamy texture but I also like the texture that eggs add to Mac in cheese too. I'm hoping the eggs will bind it together a little better since I sometimes run into the issue of my Mac in cheese being TOO creamy (weird right, too creamy??? But it can happen lol). Any suggestions?
