Weekday Candied Yams/Sweet Potatos

There is nothing better than a dish of candied yams that has been slow baked in the oven for hours, just simmering in that sugary mixture YUM!! I love sweet potatos I just don't like having to turn my oven on for an hour+ to cook them to perfection the way I like, so I save that recipe for special occassions like Thanksgiving. On the weekdays when I 'm craving sweet potatos to pair with a pot roast and cabbage I turn to this recipe. It is just as delicious and doesn't require me to turn my oven on.

Weekday Candied Yam/Sweet Potatos

Ingredients
  • 2 large sweet potatoes or yams
  • 4 tablespoons of butter
  • 1 cup of sugar
  • 1/4 t. nutmeg
  • 1/4 t. cinnamon
  • 1 t. vanilla extract (optional)
Step 1: Wash and peel two large yams or sweet potatoes.

Step 2: Cut of fthe ends of yams and throw away. Cut yams into 1/2 inch thick circles.

Step 3: Melt 4 tablespoons of butter in a large pot

Step 4: Place yams into the pot

Step 5: In a bowl combine 1 cup of sugar

Step 6: Next add 1/4 t. nutmeg

Step 7: Add 1/4 t. cinnamon & stir to combine

Step 8: Pour sugar mixture on top of yams.

Step 9: Stir well to cover yams with the mixture

Step 10: Cover yams and reduce heat to low and cook for 45 minutes or until yams are fork tender. You may need to toss yams gently half way in the cooking process to make sure they aren't sticking to the pan but be gentle.

Step 11: When yams are done transfer to a baking dish. Use a spatula to keep from breaking them up. You can also pour a teaspoon of vanilla extract over the yams at this point if you have some on hand.

Serve piping hot & enjoy!

  2. I would try adding a little lemon zest to the mix...you won't be able to tell they're in there and it brings the sweet potatoes to another level....try it girl
